Learn to prepare one of the most traditional breakfasts of Mexican cuisine step by step.
Ingredients
Corn tortillas: two pieces.
Refried beans: 2 tablespoons well filled.
White onion: 1/4 of piece.
Eggs: 2 or 3 pieces depending on how wild you are at lunchtime, hahaha.
Red sauce: Half a cup or more, to taste.
Vegetable oil for frying neutral flavor, such as canola, corn or sunflower.
Salt.
Ground black pepper.
Parsley: two tablespoons finely chopped (optional).
Grated cheese: two optional spoons.
Preparation
To start, you have to pour the red sauce in a saucepan to heat it.
Take the pair of tortillas and brown them in a pan, using a discreet amount of oil (only the one necessary to make the tortillas brown on both sides, without leaving them too long because they get hard).
Once the tortillas are heated, spread on each one a good spoonful of refried beans. Take care that the beans are well spread over the whole tortilla.
Take the pan and a little more oil to fry the eggs, to taste.
Once the eggs are ready, arrange each one on a cooled tortilla. To finish the dish, bathe the eggs with the spicy red sauce.
Optionally, decorate by sprinkling finely chopped parsley and cheese.
