Recipe of Sweet Potato Stuffed with Southwest Style

Ingredients

2 medium and clean sweet potatoes
1/2 cup diced peppers
2/3 cup black beans, rinsed and drained
1/8 teaspoon ground cumin
1/4 teaspoon chili powder
2 green lemons, squeeze the juice
sauce
1/2 avocado cut in cubes
Cilantro, to decorate (optional)

Process

Preheat the oven to 400 degrees F. Use a fork to make holes in the sweet potato. Place them on a baking sheet and bake for 45 to 50 minutes until the meat is tender.
Meanwhile, in a bowl, combine the peppers, black beans, eaten, chili powder and the juice of the limes.
Remove the sweet potato from the oven. Cut along to create a canoe type to place the mixture.
With a spoon place the sauce and the mixture in the hollows of the sweet potato. If desired, top with avocado and cilantro.
