Ingredients
1 lb cabbage cabbage, chopped
Mediterranean Dressing
1 teaspoon lemon juice
1 medium garlic clove, pressed or chopped
1 tablespoon of extra virgin olive oil
Sea salt and black pepper to taste
1-1 / 2 tablespoon of sunflower seeds
Optional
1/2 purple onion, cut into slices (steaming together with the cabbage)
6 Kalamata olives cut into slices
3 tablespoons pumpkin seeds
5 drops of organic soy sauce
A pinch of cayenne pepper
Instructions
Rinse the vegetables with cold water.
Add two inches of water to a steamer and bring to a boil over high heat.
Cut leaves into half-inch slices, twist to cut crosswise and cut stems into quarter-inch pieces. Sprinkle lemon juice (another way to activate the enzymes) and let stand for at least five minutes.
Grind or finely chop the garlic and likewise, let stand for 5 minutes.
Add the leaves and garlic to the steamer and cook for no more than five minutes.
Pass the leaves to a large bowl, and while they are still h#t add the remaining ingredients.
