Recipe of Carrot Cake Protein Pellets

Ingredients

2 cups grated carrot
12 medjool dates
1/2 cup raisins
1/2 cup of nuts
2 tablespoons ginger root, peeled and chopped
8 tablespoons (8 servings) of collagen powder
1 heaping tablespoon of cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
Grated coconut to sprinkle
Optional: sparks of dark chocolate or cocoa, melted to spray

Process

Mix all the ingredients in a food processor until you get a smooth consistency.
Cool the mixture in the freezer for 30 minutes until it reaches a paste-like consistency or until it is hard enough to make pellets.
Use your hands to make 16 balls of the same size with the mixture.
Roll the balls in a shallow bowl with the grated coconut.
Sprinkle with melted dark chocolate (optional).
Place them in an airtight container and store them in the freezer.
Enjoy two at a time.
