Recipe of Carrot Soup with Coconut

Ingredients

1 large onion, chopped
3 cups + 1 tablespoon of bone broth
2 tablespoons fresh ginger, sliced
4 cloves of medium garlic, chopped
1 teaspoon curry powder or turmeric
2 cups sliced ​​carrots, about 1/4 inch thick
1 cup sweet potato, cubed about 1/2 inch
5 oz. of coconut milk
Salt and pepper to taste

Process

Chop the onions and let them stand for at least five minutes to highlight their health benefits.
Heat 1 tablespoon of broth in a medium saucepan. Sauté the onion in the broth over medium heat for about five minutes, do not stop beating.
Add ginger and garlic, and continue sautéing for another minute.
Add curry powder or turmeric and mix well with the onions.
Add the broth, carrots, sweet potatoes and cook over medium heat until the vegetables are tender, it takes about 15 minutes.
Add coconut milk
Blend in batches to make sure the mixer is not more than half full. When it has warmed up, and the blender is too full, it may burst and burn. Add salt and pepper to taste.
Re-add the mixture to the soup pot and reheat.
